Pumpkin Dilemma



Well things have been a bit busy lately - or I guess they haven't stopped being busy - but even with evyerhing else going on I just haven't been able to shake my itch to bake.  I knew wahtever I made it had to involve pumpkin. Afterall, you can never go wrong with pumpkin desserts in October, right?? Wrong.  I settled on a recipe for "healthy pumpkin cupcakes" and I guess I got was I was asking for.  I gathered my ingredients and gave the recipe a whirl.  Instead of moist, fluffy pumpkin goodness I ended up with what was basically a bran muffin with a pumpkin aftertaste. I left those guys un-iced and gave them to Joe for his daily snacks. Was that wrong?

Anyhoo, I'm still on the hunt and have a few recipe prospects in mind.  I'm craving something like this guy from The Cupcake Blog - though of course mine will never look this good..

I guess there really is no substitute to butter and white flour... or is there? Anyone? I willing to try again, but I really would rather not end up with bran muffins.

  1. While I'm not a big fan of pumpkin-y things, (I know, I'm definitely in the minority on this), my friends LOVE all things pumpkin. A few weeks ago, one of my health-obsessed friends decided to make pumpkin brownies, and they were awful. They were dense and sort of tasteless, except for the fact that you could tell they tasted "healthy." I don't know for sure, but I feel like she almost definitely made substitutes for the delicious unhealthiness of butter and white flour. Healthy may be "better," but it certainly doesn't taste that way! Love y'all!

    1. Haha yep. I'm just not sure you can have your {healthy}cake and enjoy it too. You should open yourself up to pumpkin though.. when baked the right way it can be super delicious!

  2. reading your post i pretty much need to shut down my computer at work and just bake the rest of the day. i wonder what my boss would think if i did that but then brought cupcakes into work tomorrow ;-)

    1. That's how I felt looking at your cookies on Sarah's blog! Also, I think cupcakes at work should be 100% acceptable.

  3. I've definitely got my bake on right now so I may just have to try making one of these!!! Yum!!! Oh, butter how i miss you. One day I will eat you again! (nursing a newborn who doesn't like when I eat dairy)
